This salad is a favourite of mine . It's refreshing and only takes 10 minutes to whip up! I enjoy eating it as side to a meal. You can also eat it with Quinoa or gluten-free wraps. It's great for summer BBQ's and delivers an awesome amount of protein.
INGREDIENTS: -1 can cooked black beans -1 can cooked kidney beans -1 can chickpeas -1 medium red union , diced small (tip: wear goggles and nose plug) -1 red pepper, diced small -1/2 cup fresh parsley, chopped -1/3 cup apple cider vinegar (positive benefits of consuming- click here) -1/3 cup fresh lemon juice -1/2 cup EVOO (extra virgin olive oil) -Fresh ground pepper -Sea salt
